As I posted a sometime ago I have been
experimenting making my own rice milk. I have come with an improved method that
cuts the worry about using 'left over' water in which the rice has been cooked.
I noticed whilst I was cooking some rice pasta the other day that the water was
very like rice milk again so I looked at the ingredients and it only contained
100 % organic rice flour and water so the next day I went into my local health
food store and bought some organic rice flour. It's quite cheap to buy compared with the rice milk. I also bought one
last carton of the (very expensive) 'rice dream' to look at the ingredients and
to compare the taste with the home made stuff. The rice dream which is the only
rice milk available in here contains 'safflower oil' and sea salt. I didn't
realise this and safflower oil is an avoid for A's and I understand it is also 'avoid'
for O's!! I realised that the slight difference in taste with the home made rice
milk was the lack of oil in it...then I made a new batch using a pint of water+
2 tablespoons of milk, and some mapple syrup to sweeten + a VERY SMALL pinch of
sea salt. When the right consistency was achieved I turned it off the cooker and
stirred in a little LIGHT olive oil (the extra virgin is too strongly flavoured
in this case). You have to make sure it is well stirred. Done like that the
consistency of the drink and taste is very much improve and I find it also lasts
longer. IT can be sweeten with white sugar if there are no objections to using
that...I tried the dark molasses sugar and it didn't work too well...the flavour
and colour wasn't right somehow. I have just discovered that rice flour is HB
for my A type and neutral for my O daughters so we are all happy and we can
choose not to have the safflower oil in it. You can make it as thick or thin as
you like and it doesn't have the grainy texture that I got using ground rice. It
needs to be chilled in the fridge for best results and we have been having it
mixed really cold with half soya milk as a delicious drink...the kids love it
and it's the best substitute for 'horchata' (someone was enquiring about the
recipe for horchata recently) that I have found. It can be kept in the fridge
for around four days and a small bag of rice milk will go a long way! Hope this
is of some help to you people.
